The CTC process dates back to the 30s, created by Sir William McKercher in India’s Assam state. Most black teas in the world today are produced using the CTC method, short for Crush, Tear, and Curl. The leaves pass through various cylindrical rollers, bearing hundreds of sharp teeth, which grind the tea into tiny hard pellets. Assam CTC black tea makes a deliciously strong cup, with flavours ranging from earthy and smoky to light and refreshing depending on the brew time. Black tea like Assam has been found to play a part in disease prevention, while loading the body with antioxidants and improving blood circulation.

Serving suggestion: Brew 1 teaspoon per cup of freshly boiled water (90ºc) for 30 seconds to 1 minute. CTC teas steep faster than most, so be sure not to over-brew.
