Chamomile gets its name from the Greek ‘chamai melon’, which means ‘ground apple’. And there is a crisp apple finish to chamomile tea, muddled beneath cozy earth and layers of delicate florals. We source our chamomile flowers from Egypt – they’re premium grade, certified organic and endlessly versatile. Add a little honey to your chamomile for a sweet dessert tea, or brew with a slice of red apple to really round out those fruity notes. Chamomile’s a staple in sleepy time blends, and it pairs fantastically with lavender, ginger or peppermint. Generally, it’s best to slightly under-steep the flowers: you’ll preserve that light, meadow-fresh flavour.
