Thyme Leaves

We’re all familiar with thyme’s piney, peppery taste, but steeping dried  Thyme really wakes up the flavour profile: you start to pick up those minty notes, that undercurrent of lemony bitterness, the herby floral aroma. Thyme, brewed properly, is wonderfully complex (and doesn’t even require a roast chicken). The medicinal benefits are fantastic too: active ingredients like thymol and luteolin are powerful antioxidants, helping to fight free radicals, improve respiratory function and ease muscle strain. Add high levels of vitamins A and C, plus copper, iron and potassium, and you’re looking at a pretty powerful tonic. Try chilled over ice with raspberries, cucumber slices and a summer picnic.

Ingredients: Thyme.

Serving suggestion: Add 1-2 teaspoons and brew in 90-95ºC water for 10-15 minutes. Sweeten with honey (depending on taste).
