Queen of Green Tea
Longjing has been grown in Hangzhou, China, for more than a thousand years. It’s the Cadillac of Chinese tea: delicate, highly prized, difficult to harvest and beautiful to drink. Each leaf needs to be grown under just the right conditions, picked in the foggy Zejiang foothills during spring’s first flush, still moist with morning dew. Too much sun and the young buds lose their fragrance. (Obsessive Longjing fans can even taste the day, climate and location of a particular crop.) Longjing’s flavour is mellow and distinctly vegetal: a big mouthful of lush spinach, wet grass and spring chestnuts.

Aroma: Nutty vegetal and fresh cut grass
Serving suggestion: Add 1 teaspoon into a cup (250ml) with hot water (80-85ºC) and brew for 2-3 minutes. Steeping longer intensifies the flavour.
